How to Eat Clean: Do I or Don't I?

Adapting a clean diet has always been the bane of my existence. I LOVED my fatty, not so great for you food. I used to spend HOURS at the gym and then run through the drive thru on the way home, which completely killed all that work I had just put in. So I finally sat down with myself and I said "self, you gotta get this clean eating stuff under control". So I sat off to do just that. I did a little research on top of doing my 21 Day Fix teaching me all about clean food and portion control. The results I have gotten since then speak for themselves. I am currently down to 115 which had been my goal since junior year of highschool and I had almost just accepted the fact that it was never going to happen. Cleaning y'all, is where its at! So here are a few tips I've picked up along the way I wanted to share!!

Things you SHOULD be doing:
  • Eating 5-6 small meals a day
  • Portion Control
  • Eat breakfast (this one is so hard for most people) within an hour of waking
  • Eat healthy fats like hummus or avocado
  • Combine your complex carbs with a protein 
  • Always keep in mind you should be eating a TON of veggies


Things you SHOULD NOT be doing:
  • Eating artificial sugars (I use stevia)
  • Drinking sugar loaded drinks, try to stick with water or infused water
  • Drinking a ton of beer and fruity girly cocktails, if you must vodka and tonic is the best option
  • Eating processed foods, especially white flour
  • Eating foods with preservatives
  • Snacking off your kid's teddy grams


Word of the wise, shop the OUTSIDE of the grocery store. The isles are FILLED with over processed, artificial CRAP. Does it taste good? Heck yes, but it will also make you feel crummy afterwards. Obviously I don't beat myself up over doing this every single second of every single day. I am a firm believer in the 80/20 rule. I still allow myself to have my treats every so often because I don't want to be miserable. But that's what they are, treats, not my lifestyle. Try adopting some of these tips and see what crazy wonderful things start happening!

Eating Clean: Healthy General Tso's Chicken

I LOVE Chinese food. It's one of my biggest guilty pleasures. Of course will go ahead and cancel out that entire Insanity Max 30 workout I did for the past month in one plate full. So when I came across a healthy version of General Tso's Chicken I had to try it out. Um, it was pretty much amazeballs. You have GOT to try it! I paired it with the Lime Quinoa that I made a few weeks ago and it was pretty fantastic.

Healthy General Tso's Chicken

Ingredients:
*1 lb. raw chicken breast, boneless, skinless, cut into 2-inch pieces
*2 Tbsp. + 1 tsp. cornstarch, divided use
*¼ tsp. sea salt
*1 tsp. sesame oil
*2 cloves garlic, finely chopped
*1 thin slice fresh ginger, peeled, finely chopped
*2 Tbsp. reduced-sodium soy sauce
*½ cup low sodium chicken broth
*1 Tbsp. rice wine vinegar
*2 Tbsp. tomato paste, no added sugar
*2 tsp. hoisin sauce
*1 tsp. pure maple syrup (or raw honey)
*2 Tbsp. cold water
*2 green onions, sliced
*1 Tbsp. toasted sesame seeds

Directions:
1. Preheat oven to 375° F.
2. Line baking sheet with parchment paper; set aside.
3. Place chicken, 2 Tbsp. cornstarch, and salt in a medium bowl; toss until well coated.
4. Place chicken in a single layer on prepared baking sheet; bake for 12 to 15 minutes, or until cooked through.
5. While chicken is baking, heat oil, garlic, and ginger in large skillet over medium heat; cook for 1 to 2 minutes.
6. Add soy sauce, broth, vinegar, tomato paste, hoisin sauce, and maple syrup. Bring to a boil. Reduce heat to medium-low; cook for 4 to 5 minutes.
7. Dissolve remaining 1 tsp. cornstarch in cold water; add to soy sauce mixture. Gently boil, stirring frequently, for another 3 to 4 minutes, or until sauce begins to thicken.
8. Add cooked chicken to sauce, coating thoroughly.
9. Serve chicken sprinkled with sesame seeds and green onions

Eating Clean: Chipotle Chicken & Lime Quinoa

And its my favorite!

Um, YUM!! This is probably one of my favorite meals to date! I made a ton of the quinoa so I have been eating it all week long and the flavor has been ON POINT!! So lets get down to business! ((Please note the chicken breasts need to sit in the marinade for a while, preferably overnight, I didn't realize the first time I went try and make it))

Chipotle Chicken:

Ingredients:
*1.25 lbs of Chicken Breast Tenders
*2-3 tsp Chipotle Powder (So I didn't have chipotle powder so I used chili powder and it worked great)
*1 tbsp Olive Oil
*1 tbsp White Wine Vinegar
*2 tbsp Dijon Mustard
*2 tbsp Chopped Cilantro
*2 Garlic Cloves, Minced
*1/4 tsp Black Pepper
*1/2 Tbsp Stevia

Directions:
1. Combine all of the above ingredients into a sealed container or ziploc bag and marinate the chicken in the refrigerator for several hours.2. Heat a large, non-stick skillet over medium heat.
3. Pour the chicken and the marinade into the skillet and cook until browned on both sides and the chicken is cooked through. About 4 minutes per side. (my breasts were a bit larger so I cooked them about 6 or 7 minutes on each side just to make sure they were all the way done)
Lime Quinoa:
Ingredients:*1 cup Quinoa*2 cups Water*1/4 tsp salt*1/2 tsp Black Pepper*2 tsp Coconut Oil*Zest and Juice from 2 Limes
Directions:
1. Rinse quinoa in a fine sieve and then transfer to a medium pot.
2. Add all of the ingredients except for the lime zest and juice and bring to a boil. 

3. Reduce the heat to low and simmer 15-20 minutes, covered, until the water is absorbed.
4. Add the lime juice and zest and fluff with a fork.

Eating Clean: Quinoa Cheese Bread

Who needs garlic bread!?

Y'all...this picture does NOT do these justice! Let's just put it this way, my dad liked it and he doesn't like ANYTHING he's basically the most pickiest eat in the entire world. So hats off to me! I made this to go along with the cauliflower crusted pizza I made the other night (recipe found here)! I used the clean marinara sauce I made a dipping sauce! 21 day fix approved!!!

Quinoa Cheese Bread

Ingredients:
*½ cup quinoa
*3 tsp. olive oil, divided
*1 cup water
*2 large eggs
*1 ½ tsp. garlic powder
*1 tsp. Sea salt
*½ tsp. dried oregano leaves
*½ tsp. dried basil leaves
*½ tsp baking powder
*¼ cup shredded mozzarella 

Directions:
  1. The quinoa I found at the store was already pre-rinsed so I did have to worry about doing that. But if you don't have the pre-rinsed kind you need to place your quinoa in a fine strainer and rinse it under cool water until it runs clear.
  2. Now you need to add the quinoa and 2 tsp of olive oil to a medium sauce pot with the heat on medium for about 6 minutes stirring occasionally to allow the quinoa to toast.
  3. Next add the water to the toasted quinoa and cover bringing to to a boil and then reducing the heat to a simmer for 15 minutes, stirring occasionally. 
  4. After that, remove the lid and turn the heat to low and cook for 5 more minutes and then pour the quinoa into a large bowl to cool for about 10 mintues.
  5. Preheat the oven to 425 degrees and line a baking sheet with parchment paper and spray with cooking spray.
  6. In a smaller bowl add the eggs, 1 tsp of olive oil, garlic powder, sea salt, oregano, basil, and baking powder and cheese and whisk until thoroughly combined. Slowly add the egg mixture to the quinoa and combine well.
  7. Spread the dough into about a 1/4 inch layer on the parchment paper and bake for 18-20 minutes until the edges are brown.
  8. Top with more shredded cheese and return to the oven for 5 mins
  9. Let cool and enjoy!

Eating Clean: Cauliflower Crust Pizza & Clean Sauce from Scratch

So I love trying out new healthy recipes I actually rarely repeat them because I like experimenting with new ideas and trying to teach myself to cook in the process!! So last night I tackled a big task. I not only made Cauliflower Crust Pizza but I also made the sauce from scratch AND I made Quinoa Cheese Bread (which will be another post here shortly). Will I say this is my favorite? Not exactly, but it wasn't bad either. I just prefer my real pizza because I'm a fat kid at heart :) And of course its all 21 Day Fix approved!

Cauliflower Crust Pizza

Ingredients:
*Head of cauliflower
*3 egg whites
*3 TBSP of whole wheat flour (the recipe I used actually called for oat flower but I made due with what I already had in the cabinet)
*1/2 tsp of garlic powder
*Salt and Pepper
*Few dashes of oregano

Directions:
1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.
2. Break up the cauliflower into chunks and put them in the food processor (I used my NEW ninja) and blend until its a grainy consistency. This might take a few steps depending on how big your food processor or ninja is.
3. Place the cauliflower in the microwave for about 8 minutes to make it soft. Remove and let it cool completely (I stuck mine in the freezer for a few minutes)
4. After its cooled, take a handful at a time in a paper towel and SQUEEZE!!! Make sure you get AS MUCH water out as you can so that it will hold together better in the oven.
5. After its all squeezed add your egg whites, flour, garlic powder, salt and pepper, and oregano and mix it all really good!
6. Roll mixture into balls and flatten out on the cookie sheet I made personal pizzas for everyone. (even a baby one for Ryken!)
7. Place in the oven for 15 minutes. Then remove and carefully use a spatula to flip the crusts over and place back in the oven for 7-10 minutes.
8. Take back out and add your sauce and whatever toppings you'd like (I cooked up some turkey bacon and crumbled it on top with pieces of basil). Place back into the oven for 5-10 minutes.
9. Let cool and enjoy!


Clean Sauce from Scratch

Ingredients:
*1 small onion cut into cubes
*3-4 garlic cloves, minced
*1 tsp olive oil
*1/2 c of roasted red peppers (I found the jarred ones and used those)
*4 tomatoes, cubed
*3 TBSP of red wine vinegar
*1 tsp of red pepper flakes
*1 tsp of honey
*A bit of hot sauce
*Salt and pepper

Directions:
1. In a sauce pan on medium heat add in your onions, garlic and tsp of olive oil; cook until onions are tender.
2. Add the tomatoes and red pepper and simmer until all the juices are released.
3. Add the red wine vinegar and pepper flakes and cook for 3-4 minutes
4. Transfer it all into a food processor (again I used my ninja) and blend until its all a liquid consistency.
5. Add in the honey, hot sauce, and salt and pepper and blend again until its all mixed in.
6. Enjoy

This sauce recipe made a TON so I'm storing it to make some spaghetti out of it later on this week!

Eating Clean: Sweet Potato Bacon Turkey Burger & Balsamic Vinegar Roasted Brussels Sprouts

So now that the holidays have come to an end it is time to get this family back on track!!! I was so proud of myself for how I handled Thanksgiving but when Christmas rolled around I got a little off the beaten track. Don't get me wrong I could have been A LOT worse than I was. I did get up early Christmas morning and get my Insanity Max on but the following days I slacked a bit and I did drink my Shakeology thank goodness but the rest of my eating habits I'm not too proud of. But hey (shocker alert) I'm human!! You have to enjoy life a little bit! I did only gain back 2lbs but I just felt sluggish!

Anyway, getting back into it! Yesterday I made a plan and trekked off to the grocery store in the rainy, cold, miserable weather! Yay! So last night I whipped up these bad boys you see on the plate up there! Oh.My.Goodness. Guys, they were so good! So let's get to the recipes! ((AND THEY ARE 21 DAY FIX APPROVED))

Sweet Potato Bacon Turkey Burger

Ingredients:
*6 slices of turkey bacon
*1 cup of shredded sweet potato
*1 cup of lean ground turkey
*Salt and pepper
*Any other seasonings you want to throw in there

Directions:
1. I cooked the turkey bacon on the stove but you can do it in the microwave if you are short on time. Chop into small pieces.
2. Shred the sweet potato and throw in the microwave for about 15-20 seconds to soften it a bit.
3. Use your hands to mix the ground turkey with the shredded sweet potato and bacon bits and form small patties.
4. To cook you can either throw them in the skillet like I did or you can cook them on the grill.


Balsamic Vinegar Roasted Brussels Sprouts

Ingredients:
*Brussels sprouts
*3 TBSP of olive oil
*2 TBSP of balsamic vinegar
*2 tsp all natural honey
*Salt and pepper

Directions
1. Preheat oven to 425 degrees.
2. Trim the ends and half your brussels sprouts and put in a bowl drizzle 2 TBSP of the olive oil and mix in the salt and pepper.
3. Place brussels sprouts on foil lined baking sheet and place in oven for about 20-25 minutes.
4. After they are done take out of the oven and place them back in the bowl and drizzle the remaining TBSP of olive oil, balsamic vinegar and honey and toss. Add more salt and pepper if needed and enjoy!

Eating Clean: 21 Day Fix Approved Broccoli and Cheese Stuffed Chicken

I am loving finding all these new recipes to incorporate into the Fix!! These Broccoli and Cheese Stuffed Chicken breasts will account for 1 GREEN (broccoli), 1 BLUE (cheese), and 1 RED (chicken).

Healthy and Tasty!

Ingredients:

*Chicken Breast
*Mozzarella Cheese (shredded)
*Broccoli
*Any Seasonings you would like (I used garlic powder, sea salt, lemon pepper, and chili pepper)

Directions:
1. Slice your chicken breast in half
2. Sprinkle in your mozzarella cheese (if you are doing the fix leave enough to put on the top of the chicken breasts at well.
3. Add in your broccoli.
4. Fold chicken back over and place in a baking dish. Add your seasonings on top of the breasts
5. Bake in the oven at 350 for about 30-35 minutes.

I served my with some sweet potato fries, because lets face it, sweet potato fries are my JAM!

Eating Clean: Pulled Pork Sandwiches

I have been on a slow cooker kick lately. I mean who doesn't love a meal that practically cooks itself while you go about your day?! Its also convenient for us because Adam works nights and it allows him to have something besides a turkey sandwich to take with him for his "lunch break" Thus I present to you: Slow Cooker Pulled Pork Sandwiches! Which are most definitely 21 Day Fix approved!

Ingredients:
* Pork Loin
* 1/2 cup unsweetened applesauce
* 1/2 cup water
* 1 cup of chopped onions and mushrooms
* 1 tsp cayenne pepper
* 1 tbsp garlic powder
* 1/4 cup red wine vinegar
* 1/4 cup yellow mustard
* 1 whole wheat bun or roll

Directions:
1. Combine all ingredients except the red wine vinegar and yellow mustard.
2. Cook on low for 7-8 hours
3. Shred the pork and stir in the red wine vinegar and yellow mustard.
4. Serve on whole wheat bun and enjoy!

Eating Clean: Tex Mex Sweet Potato Skillet

Okay so I've been slacking on my blogging game! No worries though, I have a few ideas up my sleeve to hammer out some posts over the next few days or so! In the meantime I wanted to share this new recipe with you! I love trying out new recipes, its actually rare that I'll cook the same thing twice because I just like experimenting. This stuff though, I will be making it again, and again, and probably again. Introducing: 

Tex Mex Sweet Potato Skillet

Sweet Potatoes for Mexican Food?! Oh yeah! 

Ingredients:
1 lb sweet potatoes, cubed. I used 1 and 1/2 medium sized and it was plenty!
1 small onion, chopped
2 large garlic cloves, minced
1 tbsp coconut oil
2 large red bell peppers, diced
14 oz can black beans, drained & rinsed (I don't like beans so I skipped this)
1 cup corn (frozen or canned is OK)
14 oz can diced tomatoes
1 tbsp cumin, divided
1/2 tbsp all-natural taco seasoning, divided
1 tsp salt, divided
1/2 lime, juice of
1 cup (4 oz) Cheddar cheese, shredded
2 medium avocados, diced
Non-fat Greek yogurt & salsa, for garnish (optional)

Directions:
1. Preheat large deep skillet on medium heat and add coconut oil, spreading with spatula. Add sweet potatoes, 1/2 tbsp cumin, 1/2 tsp salt and cook for 5 minutes, stirring occasionally. Add onion, garlic, bell peppers and cook for another 3 minutes, stirring occasionally. Add black beans and corn, cook for another 2 minutes, stirring occasionally.

2. Add diced tomatoes, remaining cumin and salt, black pepper, taco seasoning and stir. Bring to a boil, reduce heat to low and cook covered for 15 minutes or until potatoes are soft. Squeeze lime juice on top, sprinkle with cheese and broil on high for 5 minutes or until cheese turns golden. 

I added chopped up some avocado and threw that into it and put some dabs of Greek yogurt on top!

This makes a ton of food that will easily feed the whole family! I actually made it Sunday night and threw it in a tuberware in the fridge and ate it for dinner all this week! Adam even had some of it as well and it lasted me 4 days! As you noticed there is no meat in it so of course there's always the option of cooking up some chicken in the oven and chopping it up and throw it in after its cooked! I loved that it was a quick meal I made after I put Ryken down for the night and it saved me time throughout the week for dinners!

How to Vacation Without Guilt

So as you all know, or maybe you don't, I just got back from a spending a long weekend in Minnesota (hello Fall and chilly weather!) to celebrate one of my favorite friends getting married! As we all know, vacations usually mean KILLING any sense of clean eating and exercise! So I'm going to give y'all a little run down of how I did my best to stay on track!

Please keep in mind that I was definitely on vacation so I indulged a little here and there (mmm just a little beer and hibachi), but I also did a lot better job keeping on track than I ever have on vacation before! So exhibit A: Shakeology packets. These things literally saved my life! Our flight out was at 7:30 am and being the true procrastinator that I am I was up until about 2am or 3am packing and finishing up some homework so the idea of getting up to make breakfast before we left was not even about to happen. So to keep me from engulfing a bagel or McMuffin from the McDonalds across the terminal I just got a water bottle and whipped out my trusty chocolate Shakeo and it did the trick! 

When we got there after some car trouble took place I called up my best friend who lives up there and begged her to let me go to the gym with her! Alright, she actually called and invited me along but I was super pumped to go! So I headed over to the LifeTime Fitness she is a member of and got a guest pass. The good news about this is that you don't have to have a member to get a guest pass! You can just go up there and let them know you are in town for a few days and you are interested in joining the one in your area. They will most likely let you check out their facility for a couple of days! So I got a nice two mile run in (WOWZERS!) and some ab work done!

Next was the wedding, not going to lie, I had some slip ups with a few beers and some of the delicious food that was being served! BUT most of my drinks I stuck to vodka tonics with a bit of lime juice in there! It's a nice drink without all the crazy sugar and calories that most have! Here is a lovely picture of me and my pretty darn cute date! 

So the next day I decided it was a good idea to burn off some of those crazy wedding calories and since it was so BEAUTIFUL up in Minnesota this time of the year we went on a walk/jog around one of the lakes right by the house we were staying at:

Then of course when we got back I refueled with some of my yummy chocolaty Shakeo drink! It was also SUPER handy to have at the restaurant we went to the next day so I didn't have to feel the guilt of eating the chicken wings laying around later!

Another great tip I could give you is go grocery shopping! If you are staying in a hotel, most have mini fridges you can store some fruits and veggies in there for quick on the go options! We were lucky enough to be staying at Adam's aunt's house and she had some yummy healthy snacks to choose from!!

Of course, if you are anything like me, you need your coffee!!! I would recommend stashing away some Stevia packets in your purse for emergencies! Most coffee places will have sweet and low and that's about it! So keeping these on hand will fantastic when you grabbing your coffee and don't want to load up on the artificial stuff!

All in all, it's really NOT that hard to make some healthier choices along the way! Will you have some indulgences along the way? Of course! That's what makes it fun!! But you also don't have to completely wreck all you hard work along the way! Vacation isn't about losing weight, its about maintaining the work you've already done!! Happy vacationing guys!

Eating Clean: Chocolate Shakeology Balls

Oh my goodness guys, you have to try these! SO GOOD! Us girls all know around that "special time" of the month we need chocolate. It doesn't matter how good you are the rest of the month, at that moment we need chocolate and we need it NOW!! 

Good news, these delightful treats are not only yummy in all kinds of ways. THEY ARE GOOD FOR YOU! Now I wouldn't recommend eating the whole batch in one sitting, but one or two for a snack will kick those sweet cravings out the door!

So what you're going to need is:
*1 Cup Chocolate Shakeology
*1 Cup Quick Oats
*1 Cup Natural Peanut Butter
*1/3 Cup of Honey

What you're going to do is:
1. Throw all that stuff into a big bowl and mix it up
2. Take about a TBSP of the mixture and roll it into balls
3. Set on foil and chill in the fridge

Bing, baam, boom you got yourself a tasty treat!

Eating Clean: The Easiest Meal You'll Ever Make

Who doesn't love easy?! Plus its healthy, plus it tastes YUMMY, plus its a crock pot meal, AND it's budget friendly! Done and done!! So whats it called?

Ingredients:
*2-3 Skinless, Boneless Chicken Breasts
*A Handful of Spinach
*1 Jar of Clean Marinara 
*1 Can of Diced Tomatoes

Directions:
*Throw everything into the crock pot and turn it on low for 7-8 hours.

Seriously, that's it! I paired it with a side salad or you could do a sweet potato!! Like I said, easiest meal you'll ever make!

21 Day Fix: The First Week

So I started my newest round of the 21 Day Fix with my challenge group I have going. Which, by the way, my challengers are ROCKING!! One of my girls lost 4 lbs in the first week!!! This is my third round with this awesome program! This is a perfect example of why I love these program, they don't just hang out on my shelves after I'm done with the first go around I am constantly switching in between my programs as well as trying out the new ones! So first things first, here was the line up of workouts:

Week 1 Workout Plan

I won't lie, this is my third round with this program and the Total Body Cardio still kills me! Its cardio with weights and to this day I have to use to modifications, it is INTENSE! My favorite workouts are by far the Upper Fix, Lower Fix, and Dirty 30. I have grown to LOVE weight training and seeing the muscles I'm getting from it! **Lifting weights DOES NOT make you bulky**

Lower Fix Workout

On to the meal plan! In all my previous rounds I had stuck to pretty much just eating plain jane and just eating the different containers without trying to get too creative and make meals out of them! This time around I decided I was going to try and spice it up a little and make some actual meals out of the different containers I was allowed. So I set to Pinterest! Here is the meal plan I used for my first week!

Week 1 Menu Plan

I tried out some cool recipes I found and figured out which containers I had to account for them. I am in the 1200-1400 calorie bracket so that means I get allotted: 3 Green(veggies), 2 Purple(fruits), 4 Red(proteins), 2 Yellow(starches), 1 Blue(good fats), 1 Orange(dressings), 2 Teaspoons(oils). I actually found it easiest to pick out what my dinners were going to be and then fill in the rest of my day with the containers I had left to use! Of course my Shakeology(1 Red) is always accounted for too because I have to have it every day or I'm a sad little girl!

I love this program because no matter how many times I've done it I still get results each new time I do it! I've already lost 2 lbs and my stomach is feeling and looking more defined! And the meals this time around are even more enjoyable!! Even better news, this program is on sale through the end of the month!

A Day in the Life of a 21 Day Fixer

So as I said the other day I started a new round of the 21 Day Fix (YAY!) So my thought was I should lay out what a whole day of eating looks like on this program. I seriously feel like I eat MORE when I'm doing this program than I normally would. So that fear you have that you think you'll be starving on this program, go ahead and throw that out the nearest window and let's get this party going!!

8:00am: I wake up and go check on Ryken (who slept until 10am this morning! WHOO!) I have a glass of water immediately and start my Kuerig up because Mama needs her coffee! I then proceed to pop into my challenge groups I have going to check in and check my emails for school and whatnot and figure out which tasks I need to tackle for the day

Breakfast Shakeology
10:00am: The little monster arises! haha get him a bottle and set up my handy dandy Hamilton Blender to get my Shakeology started. My ABSOLUTE favorite recipe is my vegan chocolate with a tsp of PB2. Today I threw in a green container of spinach because I had an extra veggie container unaccounted for when I drew up my menu plan for the week.

I spend the next few hours chasing Ryken around, who despite getting a MILLION AND A HALF toys for his birthday still insists that his favorite is the dog's water bowl. Oh this boy of mine. I then attempted to fold laundry which was a complete joke because Ryken took that as an invitation to unfold every single item. But I'm getting off track.

12:00pm: This is probably my favorite snack of the day. I grab my greek yogurt (red container for those of us keeping count), strawberries (purple) and mix all that yummy goodness up. (I normally would have added some honey into it but I'm trying to be good for these next three weeks!)

I then decided to try to sit down and work on some homework since I've been seriously slacking in that department while Ryken took a nap. I also did a little coaching work (probably more than actual homework because funny thing, I enjoy that more than homework!) I also started dinner in the crock pot!

2:30pm: I finally dragged Adam out of bed so he could entertain Ryken for a while so I could make myself some lunch! Which was a sweet potato (yellow container) with cinnamon sprinkled over it, Brussels Sprouts & Onions (divided a green container) and a can of tuna fish (red) with balsamic vinegar (orange) drizzled over it! Honestly, this was too much food so I didn't even finish it all but it was super yummy!

3:10pm: I left the house to go pick up the little boy that I pick up from school and get back right in time for Adam to head off to work for the night (sad face)

5:00pm: Snack time! I voted for some kale chips! I went the lazy route at the grocery store and bought the kale already pulled off the stalk in the little containers. I dumped some of that on a baking sheet drizzled EEVO (tsp) over it and sprinkled some garlic powder and sea salt on top and baked for about 10 minutes at 300 degrees! Seriously guys, they taste like french fries!

I spend the next couple of hours again, pulling Ryken out of the dog's water bowl, attempting to pick up the house a tad bit, chase the dog back into the house after he escapes. Hunt down the one year old because he's managed to crawl himself into a random room and I can't find him for at least 5 minutes which to a one year old is like 5 hours. MOVING ON!

7:00pm: Dinner time!! Like I said above I went with a crock pot meal tonight! Pork Carnitas! SO good! I really didn't think I'd get to thoroughly enjoy them as much as I wanted because I thought I wouldn't get to eat as much as I wanted but I couldn't even finish what I was "allowed"! Now I bet you're wondering while I was doing all this eating and chasing my child and dog around when did I get my workout in?! That would be about half an hour ago after I finally got my wild child down for the night! Hey, mama's gotta do what mama's gotta do! At least I made no excuses and got it in when I would have MUCH rather laid my tired booty in bed and watch some tv!! 

But there you have it! As you can see this program is pretty much the shizz because not only are the workouts ONLY 30 minutes every day, BUT you get to EAT ALL THIS FOOD!! And still get FANTASTIC results. I know, I didn't believe it at first either, but when I dropped 6 pounds the first time I did it I became a believer!!  Interested in joining into my next challenge group!? Eating Clean: Egg Fried Rice (21 Day Fix Approved)

So I started my next round of the 21 Day Fix on Monday, yay! I seriously LOVE LOVE LOVE this program I have gotten SO many great results from it! More on that later though! What I want to talk to you about today is mixing up the containers a little bit!

This round I decided to step a little outside the box! All my previous rounds I just selected which containers to eat at each time of the day but I never really got brave enough to make an actual meal out of them! So this time I did a little research and found some really yummy looking things I wanted to try out! Last night I tried a little concoction I like to call Egg Fried Rice! This uses 1 red container, 1 yellow, and 1 green. (I actually had a left over red container for the day so I added turkey bacon to the mix as well, because who doesn't love turkey bacon?!)

21 Day Fix Dinner

So first things first I assembled my ingredients:

2 Eggs
Brown Rice
Veggies of my choice (I chose to use onions and carrots but you can do whatever you like just make sure they fit into your green container!)
Like I said above I also used 2 slices of turkey bacon but that was an extra red container!

Directions:
1. I used the instant brown rice so I just microwaved a serving of it and measured out the correct amount to fit into the yellow container
2. Then I cooked up my turkey bacon in the skillet on medium heat and set that aside
3. Next I sprayed my skillet (you can also use one of your tsp for this and add coconut oil or EEVO) and cooked up my veggies and set those aside.
4. I then scrambled up my eggs.
5. I added everything to my bowl and devoured it!

I was actually really surprised because I thought I for sure was going to miss my beloved soy sauce but I didn't at all!! I did sprinkle some garlic powder and paprika on top of the finished product and it was DELICIOUS!
