Clean Eating Orange Chicken |
Ingredients:
- Brown Rice
- 3/4 C Fresh Orange Juice
- 3 TBSP Low Sodium Soy Sauce
- 1 TBSP Whole Wheat Flour
- 2 TBSP Cooking Oil
- 3-4 Small Dried Chilies, Broken into Pieces
- 1 Small Red Bellpepper, Cut in 1 Inch Chunks
- 1 Small Red Onion, Diced
- 1 LB Skinless Boneless Chicken Breast, Cut into 1 IN Chunks
Directions:
- Cook rice according to box, I just used the Minute Brown Rice
- In small bowl whisk together orange juice, soy sauce, and whole wheat flour
- Heat wok on high, add oil and add chilies and bell pepper and stir fry for about 30 seconds
- Add onion and stir fry for another 30 seconds
- Add chicken and stir fry until cooked thoroughly, about 4-5 minutes
- Add juice mixture and boil until it thickens, about a minute
- Portion over rice and enjoy!
