Y'all...this picture does NOT do these justice! Let's just put it this way, my dad liked it and he doesn't like ANYTHING he's basically the most pickiest eat in the entire world. So hats off to me! I made this to go along with the cauliflower crusted pizza I made the other night (recipe found here)! I used the clean marinara sauce I made a dipping sauce! 21 day fix approved!!!
Quinoa Cheese Bread
Ingredients:
*½ cup quinoa*3 tsp. olive oil, divided
*1 cup water
*2 large eggs
*1 ½ tsp. garlic powder
*1 tsp. Sea salt
*½ tsp. dried oregano leaves
*½ tsp. dried basil leaves
*½ tsp baking powder
*¼ cup shredded mozzarella
*½ tsp. dried oregano leaves
*½ tsp. dried basil leaves
*½ tsp baking powder
*¼ cup shredded mozzarella
Directions:
- The quinoa I found at the store was already pre-rinsed so I did have to worry about doing that. But if you don't have the pre-rinsed kind you need to place your quinoa in a fine strainer and rinse it under cool water until it runs clear.
- Now you need to add the quinoa and 2 tsp of olive oil to a medium sauce pot with the heat on medium for about 6 minutes stirring occasionally to allow the quinoa to toast.
- Next add the water to the toasted quinoa and cover bringing to to a boil and then reducing the heat to a simmer for 15 minutes, stirring occasionally.
- After that, remove the lid and turn the heat to low and cook for 5 more minutes and then pour the quinoa into a large bowl to cool for about 10 mintues.
- Preheat the oven to 425 degrees and line a baking sheet with parchment paper and spray with cooking spray.
- In a smaller bowl add the eggs, 1 tsp of olive oil, garlic powder, sea salt, oregano, basil, and baking powder and cheese and whisk until thoroughly combined. Slowly add the egg mixture to the quinoa and combine well.
- Spread the dough into about a 1/4 inch layer on the parchment paper and bake for 18-20 minutes until the edges are brown.
- Top with more shredded cheese and return to the oven for 5 mins
- Let cool and enjoy!
